For special diets - no fat - no sugar and no salt.

2 c. flour
2 tsp. baking soda
1-2 tsp. cinnamon
1 c. apple juice concentrate
1/2 c. skim milk
1/2 can crushed pineapple, unsweetened, with juice
Chopped raisins (optional)
4 c. oatmeal (1 minute)
3 egg whites, beaten until soft peaks
Non-stick cookie sheets

1. Sift dry ingredients in mixing bowl.

2. Add juice, pineapple and milk. Mix well and add oatmeal and raisins. Fold in egg whites. Spoon on cookie sheets. Bake at 400 degrees for 8-10 minutes.

Cool on wire racks - DO NOT REMOVE FROM PANS. (They glaze on bottom when cool - pick up with fingers). Store in tightly covered container. They freeze well. Makes a large batch.
