Cucumbers, enough to fill gallon jar
1 c. salt
1 tbsp. alum
1 qt. vinegar
7 c. sugar
Cut cucumbers into strips, quarter, and put into gallon jars. Put 1 cup salt on cucumber and cover with boiling water. Let set for 7 days. Drain off water. Add 1 tablespoon alum and cover again with boiling water. Let set for 1 day. Drain off alum water and rinse with cold water, leaving cucumbers in gallon jar. Heat 1 quart vinegar with 7 cups of sugar. Pour over cucumbers, let stand 3 days. Drain off liquid and bring to a boil. Pack cucumbers in jars. Pour hot mixtures over them and seal.
