2 c. flour
1 1/4 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
2 c. grated carrots
1/2 c. raisins
1/2 c. chopped pecans
1/2 c. coconut
1 apple, peeled & grated
3 eggs
1 c. oil
2 tsp. vanilla

Sift all dry ingredients into large mixing bowl. Stir in carrots, raisins, nuts, coconut and apple.

In a separate bowl beat oil, eggs and vanilla. Pour over flour mixture and mix with wooden spoon just until combined. Do not over mix.

Pour into greased muffin tins and bake at 375 degrees for approximately 15 minutes or until they spring back when touched. Cool 5 minutes before removing from pans. You may also use mini muffin tins. Makes approximately 18 regular muffins. These are the best muffins I've ever had! And healthy, too!
