GREENIE'S FAMOUS SAUSAGE PASTA 
1 lb. hot breakfast sausage
4 tbsp. olive oil
2 tsp. chopped garlic
28 oz. can Italian peeled plain tomato, sliced with their juice
1 c. heavy cream
salt
pepper
2 tbsp. chopped fresh parsley
24 oz. pasta shells
freshly grated Parmesan cheese

Slice sausage into disks 1/4 inch thick. Put olive oil and garlic in skillet until golden. Add sausage and brown (about 15 minutes. Add tomato. Cook uncovered at a gentle simmer for 20 minutes. Add cream and turn up heat. Cook 1 to 2 minutes. Stir frequently until cream is reduced. Add salt and pepper. Turn off heat and add parsley. Cook pasta al dente and toss with sauce. Serve at once (I'm getting hungry!!) with grated cheese. Serves 6 to 8 hungry people.
