2 c. cottage cheese
1 c. buttermilk
2 tbsp. chopped parsley
1 tbsp. lemon juice
1/2 tsp. salt or 3/4 tsp. seasoned salt
Sieve cottage cheese or mix in blender until smooth and creamy. Stir in buttermilk, lemon juice, parsley and salt. Chill until ready to serve. Makes 3 cups. Calories: 1 tablespoon = 17 calories.
NOTE: Other flavors may be substituted for salt (such as onion, garlic, celery).
