EMERALD ISLE MOUSSE 
1 (3 oz.) pkg. lime flavored gelatin
1 c. boiling water
1 (8 oz.) can crushed pineapple in syrup
2 tbsp. green creme de menthe or a few drops of green food coloring
1 c. cream, whipped

Dissolve gelatin in boiling water. Add pineapple with syrup and creme de menthe. Chill until thickened, stirring often. Fold in whipped cream. Spoon into 1 quart mold and chill.
