|SUGAR - FREE LEMON COOKIES|
1/2 c. butter
1 tbsp. liquid sweetener or 12 saccharin tablets (1/4 grain each), dissolved in 1 tsp. water
1 egg, slightly beaten
1 tsp. vanilla extract
1 tsp. grated lemon peel
1 c. flour
1/4 tsp. baking soda
1/4 tsp. salt
Cream shortening. Add sweetener, egg, vanilla, and lemon peel. Beat well. Combine flour, baking soda, and salt; add to creamed mix. Drop by teaspoonfuls onto an ungreased cookie sheet. Press flat with fork.
Bake at 375°F for 8 to 10 minutes or until light brown.
Cooks Note: Pecan halves may be pressed into top of each cookie before baking.
Makes 3 dozen cookies.
