Salt and pepper
Peel and grate potatoes and onion. Add 2 eggs, and salt and pepper to taste. In a large skillet, heat enough oil to cover bottom of pan. With a tablespoon, spoon in mixture, and flatten to 3 inch round pancake. Fry until golden brown. Drain on paper towel. Yield approximately 12 to 15 pancakes.
