CANTALOUPE BANANA BREAD 
3 1/2 c. sifted all-purpose flour
3 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
2 c. mashed banana (4-6)
1 cantaloupe, grated
2 tbsp. lemon juice
3/4 c. shortening
1 1/2 c. sugar
3 eggs
3/4 c. milk
1/2 c. chopped pecans or walnuts

Sift dry ingredients together. Cut in shortening. Add rest of ingredients. Stir well. Bake in greased and floured pans. Bake at 325 degrees for 45 minutes to 1 hour or until done.
