EASY CRAWFISH GRAVY 
1 lg. onion, chopped fine
1 bell pepper, chopped fine (small)
2 lbs. crawfish tails (with fat)
2 sticks of butter
Onion tops (chopped fine)
Salt and pepper (to taste)

In large skillet, melt butter. Brown onions, bell peppers and onion tops in melted butter. Add salt and pepper to taste. Put in crawfish (with fat) and cook 10 minutes. Serve over rice. If you like it hot, one can of diced Rotel can be added. Serves 8.
