DIABETIC COCONUT FRUIT COOKIES 
1 1/2 c. flour
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/3 c. diet butter
1/3 c. flaked coconut
1 egg
1/2 c. unsweetened fruit juice
2 tsp. orange or lemon peel, grated
Sugar Substitute Equal to 1/3 c. sugar

Preheat oven to 400 degrees. Combine flour, baking powder, baking soda, and salt, cut in butter until consistency of peas. Stir in coconut add remaining ingredients all at once. Stir with fork until dough holds together. Drop about 2 inches apart by teaspoons onto an ungreased cookie sheet. Bake until light golden brown (about 10 minutes). Yield: 3 dozen.
