1 c. chopped walnuts
3 tbsp. oil
2 med. onions, sliced
1/2 lb. mushrooms, sliced
3 c. broccoli
1/2 c. water chestnuts, sliced
1 clove garlic
1 tbsp. soy sauce
1/2 c. sour cream
1/4 lb. Monterey Jack cheese, grated
1/4 lb. cheddar cheese, grated

Heat and stir walnuts in oil until lightly browned. Remove and save. Add onions and mushrooms to remaining oil and brown slightly. Stir fry broccoli until tender crisp, about 8 minutes. Stir in water chestnuts and garlic, remove from heat. Add walnuts, soy sauce and sour cream. Stir lightly to coat vegetables. Put in casserole. Sprinkle cheese evenly. Bake at 400 degrees until cheese melts, about 20 minutes. Serve with brown rice.
