SOUR CREAM APPLESAUCE BRAN MUFFINS 
1 1/4 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 c. sugar
1 c. bran flakes
1 egg, beaten
1/2 c. sour cream
1/4 c. butter, melted
1 c. applesauce

Sift dry ingredients into bowl, except the bran flakes. Combine bran, egg, sour cream, butter and applesauce. Let stand for 2 minutes. Stir into dry ingredients - just. Spoon into greased muffin tins (12). Add nut crunch topping. Bake at 400 degrees minutes.

NUT CRUNCH TOPPING:

1/3 c. brown sugar
1/3 c. chopped nuts
1/2 tsp. cinnamon

Mix with fork.
