6 potatoes
4 tbsp. butter or chicken fat
1/4 tsp. white pepper
1 onion, minced
3 eggs, beaten
2 egg yolks
1/2 tsp. salt

Preheat oven to 350 degrees. Peel and boil potatoes, until tender, about 20 to 25 minutes. Saute onion in 1 tablespoon butter or chicken fat until crisp as bacon. Drain on paper towel. Beat the eggs, except for the yolks, adding salt and pepper. Mash the potatoes, add the onions and beaten eggs. Shape into long narrow patties, putting a crease in the top of each patty with a knife. Beat the egg yolks, adding a pinch of salt. Paint tops and sides with the beaten egg yolk. Place into oven until brown, about 10 to 15 minutes. Makes 6 knishes.
