GREEN TOMATILLO SAUCE 
8 tomatillos, husks removed, about 1 lb.
2 jalapenos
1/2 bunch cilantro
2 garlic cloves
Salt to taste

Drop tomatillos and peppers into boiling water in a saucepan and boil until soft, about 15 minutes. Puree to desired texture in food processor or blender, adding cilantro, garlic and salt to taste. Add water if a thinner sauce is desired.

TO SERVE:

Cover plate with roasted tomato and pepper sauce. Place grilled chicken in center. Coat top of chicken breast with roasted tomato sauce. Lightly streak plate with tomatillo sauce. Add thinly sliced crispy deep fried corn tortilla strips forming birds nest around edge of plate.

Can also serve pasta tossed with the roasted pepper and tomatillo sauce with or without chicken.
