1 1/2 tsp. salt
1/2 tsp. sugar
1/2 tsp. pepper
1 tsp. garlic cut into small pieces
1 lb. large shrimp
16 oz. vegetable oil

First wash the shrimp, then chop off the shrimp head. Do not peel off the shell. Cut the back of the shrimp about 1/2 inch deep. Second, pour the oil in a small pot, heat until very hot. Put the shrimp in and fry them about three minutes. Take the shrimp out of the pot, leave them on the plate.

Third: use another pan. Heat the pan for one minute. Then pour in one tablespoon oil, 1 1/2 teaspoon salt and all of the garlic. After a second, add the fried shrimp, pepper and sugar. Stir all together and cook for three minutes. The salt and pepper shrimp is now done.
