JAMAICAN GINGERBREAD 
2 1/2 c. flour
1 tsp. salt
1 tsp. baking powder
1 tsp. cinnamon
2 eggs
1/2 tsp. ground cloves
1/2 c. shortening
1/2 c. sugar
3/4 tsp. baking soda
1/2 c. molasses
1 c. hot water

Sift together salt, flour, baking powder, ginger, cinnamon and cloves. Cream the shortening, sugar and baking soda. Add molasses, stir in 1/2 of the flour mixture and beat in the eggs. Add hot water alternately with remaining flour mixture and beat for one minute. Bake in a greased 9"x9"x2" pan for about 45 minutes. Bake at 350 degrees.
