7 - UP CAKE & PINEAPPLE ICING 
7-UP CAKE:

1 box yellow cake mix
4 eggs
1 box pineapple or vanilla instant pudding
3/4 c. vegetable oil
1 bottle (10 oz.) 7-Up

Combine first 4 ingredients; beat until light and fluffy. Add 7-Up and beat well. Pour into lightly greased 9 x 13 x 2 inch cake pan (or two 9 inch pans). Bake in preheated 350 degree oven about 40 minutes or until done. Remove from oven and cover immediately with Pineapple Icing.

PINEAPPLE ICING:

2 eggs, beaten
1 1/4 c. sugar
1 tbsp. flour
1 stick butter
1 c. crushed pineapple (including juice)
1 can shredded coconut
1/2 c. English walnuts

Blend sugar and flour; combine with beaten eggs, butter and pineapple in saucepan. Cook until thick. Add coconut stirring until blended then pour over hot cake.
