PICKLED HOT PEPPERS WITH OIL 
4 qt. peppers
1 c. sugar
2 tbsp. prepared horseradish
2 cloves garlic
10 c. white vinegar
2 c. water
1 c. oil

Wash peppers. Combine all ingredients and simmer 15 minutes. Pack peppers into hot jars leaving 1/4 inch head space. Pour boiling liquid over peppers. Adjust caps. Process pints 10 minutes in boiling water bath (quarts need 15 minutes). Makes about 8 pints.
