ITALIAN ZUCCHINI CASSEROLE 
2 quart casserole - use as little or as much ingredients, according to the size of your casserole dish. 2-3 med. onions, sliced thin 1 sm. can tomato sauce Grated cheese or shredded cheese Salt & pepper Oregano (can be omitted) Vegetable oil

Slice thin zucchini and onions. Just cover bottom of casserole with vegetable oil. Layer as follows with all zucchini and onions. 1) Zucchini. 2) Onion. 3) Cheese. 4) Salt and pepper. 5) Just a little oregano. 6) Tomato sauce, drizzle over layer. Zucchini, onion. Be sure to end with extra cheese on top.

Drizzle vegetable oil over top. Cover and bake at 350 degrees for 35-45 minutes, or until zucchini and onions are soft and juices are bubbly.
