LOUISIANA CREOLE SAUCE 
2 tbsp. chopped green onion
2 tbsp. chopped green pepper
1/4 c. sliced fresh mushrooms
1 tbsp. oil
1/2 tsp. pepper
1 tsp. dried sweet basil
16 oz. can low sodium tomatoes, undrained

Saute onion, green pepper and mushrooms in oil over low heat 5 minutes. Add remaining ingredients and simmer 20 minutes. Serve with fish, chicken or beef. Makes 2 cups.
