JELLIED CUCUMBER SALAD 
1 lg. pkg. lime Jello
2 c. HOT water
2 tbsp. vinegar
2 tbsp. minced onion
2 c. seeded cucumber, grated
1/2 tsp. salt
1 c. mayonnaise

Dissolve Jello in hot water. Add vinegar and minced onion. Chill until partially thickened. Add salt to grated cucumber, drain well. Whip partially thickened Jello until fluffy; fold in mayonnaise and cucumber. Pour into ring mold and refrigerate. (Shrimp in center is good. Add 1/4 cup French dressing to shrimp.)
