IMPOSSIBLE COCONUT CREAM PIE 
4 eggs
1 tsp. vanilla
1 stick butter
2 c. milk
3/4 c. sugar
1/8 tsp. salt
1/2 c. flour
3/4 tsp. baking powder
1 c. flaked coconut, save 1/2 c.

Put all ingredients into blender and blend for a minute. Grease and flour 10" pie pan. This recipe makes its own bottom crust. Pour batter into pan and sprinkle remaining 1/2 cup coconut flakes over batter. Bake at 350 degrees for 45 minutes until coconut is golden brown.
