CRAB AND RICE 
2 bunches scallions
2 cloves garlic
1 lb. crab (real or imitation)
2 tbsp. butter
2 tbsp. oil (light)
6 c. cooked white rice

Prepare rice. In a skillet, saute garlic and scallions until soft (not brown). Add crab meat until heated and then add butter. Mix well.

Add mixture to the rice. Stir and add pepper to taste. If mixture is not moist, or when reheating add a little more butter and water. Serves 4 to 6.
