CURRIED RICE AND CHICKEN 
1/2 stick butter
3 carrots, sliced thin
2 onions, diced
1/4 tsp. garlic or 1 garlic clove
2 c. chicken broth
1/2 c. cooked rice
1/2 tsp. curry powder
Parsley
6 - 8 boneless chicken breasts

Saute carrots, onion and garlic in butter. Add chicken broth. Bring to boil. Then add curry powder. Mix with cooked rice. Put mixture into casserole dish. Bake chicken breast to about 1/2 done. Then place chicken on top of rice dish. Bake approximately 45 minutes at 350 degrees. Sprinkle parsley to taste. Feeds 6 to 8 people.
