BAKED ZUCCHINI CASSEROLE 
4 c. zucchini, cut into bite sizes
2 carrots, sliced
1 med. onion
1 stick celery, chopped
1/2 c. butter, melted
1 can cream of chicken soup
1/2 c. sour cream
4 c. dried bread cubes
Colby Longhorn cheese

Mix bread cubes, butter, onion, and celery. Add zucchini and carrots. Mix sour cream and soup; mix with other ingredients. Pour into 2 quart casserole and cover with cheese. Bake at 350 degrees for 40 minutes or until cheese is brown. Serves 8.
