BROCCOLI AU GRATIN 
1 1/2 lb. fresh broccoli
3/4 tsp. salt
3 tbsp. butter
3 tbsp. flour
1 1/2 c. milk
3/4 c. grated Cheddar cheese
Bread crumbs
Paprika

Wash broccoli. Pat dry with paper towels. Trim stalks and split. Cook broccoli in enough water to cover and 1/4 teaspoon salt, for 10 to 15 minutes or until tender. Drain.

Place in greased casserole dish. In pot combine butter and flour thoroughly. Add milk, gradually, stirring vigorously. Bring to boil, stirring constantly. Reduce heat, add remaining salt. Cook 1 minute. Add cheese, cook until melted. Pour over casserole. Top with crumbs.

Bake at 325F for 25-30 minutes. Garnish with paprika.

Serves 6.
