1 pkg. corn muffin or cornbread mix
1/3 c. sugar
1/8 tsp. baking powder
2 med. sized bananas having brown-flecked peel, peeled and mashed (about 1 3/4 c.)
2 2/3 tbsp. lukewarm water
1 egg, well beaten
1/4 tsp. vanilla extract
Combine mix, sugar, baking powder, and a few grains of salt in a bowl. Mix well and stir in remaining ingredients. Turn into a greased 8 x 8 x 2 inch baking pan and spread evenly. Bake at 425 degrees for about 20 minutes. Makes 1 8-inch square cornbread.
BANANA CORN MUFFINS:
Follow recipe for Banana Cornbread. Spoon batter into greased 2 1/2 inch muffin pan wells; fill each 3/4 full. Bake at 425 degrees for 15-18 minutes. About 1 dozen muffins.
