MOIST AND DELICIOUS ZUCCHINI BREAD 
2 c. sugar
1 c. oil
3 eggs
3 c. flour
1/2 tsp. baking powder
1 tsp. vanilla
1 c. chopped nuts
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. ginger
1/2 tsp. salt
2 c. shredded zucchini, peeled (one lg. one)

Cream sugar and oil. Add eggs, one at a time, beating well after each addition. Add rest of ingredients. The batter will be very thick. Add 2 cups shredded zucchini (peeled, one large one), 1 teaspoon vanilla, and 1 cup chopped nuts. Grease and flour 2 loaf pans. Bake in 350 degree oven for 50-55 minutes. Cool on wire racks for 15 to 20 minutes. Turn out of pans.
