3 tbsp. flour
1/4 tsp. baking powder
2 eggs, well beaten
1 tsp. salt
6 medium potatoes (3 c.), grated
1 tbsp. grated onions (optional)
Combine first 3 ingredients and set aside. Put grated potatoes in bowl; add eggs, onion and flour mixture, beating thoroughly with spoon. Heat oil in heavy skillet. When oil is hot, spoon about 2 tablespoons of batter for each pancake into oil, leaving about 1/2-inch between pancakes. Cook over medium heat until golden brown and crisp on one side. Turn carefully and brown on other side.
