FLOUNDER AND SPINACH BAKE 
1 lb. flounder fillets
10 oz. frozen chopped spinach, thawed and well drained
1 1/2 c. seasoned croutons, coarsely crushed
1 c. shredded Swiss cheese
8 oz. corn, drained
1 beaten egg
3 tbsp. water
Lemon pepper
1 med. tomato, cut into 12 thin wedges

Combine spinach, croutons, corn and 3/4 cup cheese. Combine egg and water. Add to spinach mixture. Mix well. Spread mixture evenly into baking dish. Cover with foil and bake at 375 degrees for 10 minutes.

Arrange fillets over spinach. Sprinkle lemon pepper. Cover with foil. Bake for 15 minutes. Remove foil. Arrange tomatoes on fillets and sprinkle with remaining cheese. Bake 5 minutes. Serves 6.
