TURKEY CROQUETTES 
3 tbsp. butter
1/2 c. flour
1 c. milk
1 tsp. chopped parsley
1 tsp. lemon juice
1 tbsp. minced onion
1 3/4 c. ground turkey
1 tsp. salt
1/4 tsp. celery salt
Pepper
Bread crumb
Egg

Make white sauce with first six ingredients. Add turkey and seasoning. Mix well. Spread in a shallow pan and chill thoroughly. Form into patties or cones. Roll in fine, dry bread crumbs (or cracker crumbs). Dip in slightly beaten eggs and roll again in crumbs. Fry in hot fat until golden brown. Turn and brown on other side.
