|FLOURLESS PEANUT BUTTER OATMEAL|
1 cup peanut butter (smooth or crunchy)
1 cup packed brown sugar
1 teaspoon baking soda
3/4 cup chocolate chips
3/4 cup old fashioned oatmeal
2 teaspoons water
Thoroughly mix by hand first 4 ingredients, then fold in chips and oatmeal. Add water last,it helps keeps the cookies moist because of the oatmeal. Place cookie dough in fridge while heating the oven to 350, and between baking.
Drop dough from teaspoon onto a cookie sheet lined with parchment paper. Bake for 8 minutes. Cookies will be soften at the center, but they will set up while letting them cool (on the cookie sheet).
I like to omit the chips sometimes and add raisins.
