PETITE CHERRY CHEESECAKES 
2 (8 oz.) pkgs. cream cheese
3/4 c. sugar
2 eggs
1 tsp. lemon juice
1 tsp. vanilla
1 can cherry pie filling
24 vanilla wafers

Line cupcake muffin tins with cupcake papers. Place a vanilla wafer in the bottom of each. The vanilla wafer is the crust for each cheesecake. In a bowl mix the cheese, sugar, eggs, lemon juice and vanilla. Beat 2 minutes. Bake at 350 degrees for 15 to 20 minutes. Wait 5 minutes before removing the cheesecake from muffin tins. Cool and top with cherry pie filling. Chill. Makes 24 cupcakes.
