2 eggs, slightly beaten
1/2 c. shrimp, cut in sm. pieces
1/4 c. green peas, fresh or frozen
4 c. cooled, cooked rice
2-3 tbsp. soy sauce
2 green onions, shredded
Peanut oil

In a wok or large frying pan, heat 1 tablespoon of oil until very hot. Scramble eggs into small pieces. Remove and set aside. Drizzle 1 tablespoon of oil into the wok or frying pan, then stir fry the shrimp until done. Remove and set aside. Repeat with the peas. Drizzle 2 tablespoons of oil into wok or pan and stir fry rice until hot. Add eggs, shrimp and peas. Then add soy sauce and green onions.
