SHRIMP OR LOBSTER IN BLACK BEAN SAUCE 
1 lb. fresh shrimp, shelled and deveined
1/4 lb. ground pork
2 minced garlic cloves
1 c. chicken broth
1 - 2 tbsp. salted black beans, rinsed and mashed
1 tsp. sugar
1 1/2 tbsp. cornstarch mixed with water
1 egg, slightly beaten
4 green onions, slivered
Dash pepper

Brown garlic with ground pork in hot oil. Add chicken broth, black beans, sugar and pepper. Simmer a few minutes. Add shrimp and cook until shrimp turns color. Thicken with cornstarch mixture. When thickened, add beaten egg and green onions. Heat for just a minute or two stirring all the while. Do not over cook egg. Serve with hot rice.

Salted black beans may be found in Oriental food store.
