HASH BROWN OVEN OMELET 
1 (20 oz) package frozen hash browns
1/2 green pepper
12 eggs beaten
2/3 cup milk
salt and pepper to taste
1 large onion diced
2 tsp. butter
2 cups ham, bacon, or sausage
1 cup shredded cheddar cheese

Brown onions and green pepper in butter. Spread hash browns on bottom of a greased 9 x 13 pan. Sprinkle meat over hash browns. Beat eggs, milk, salt and pepper together. Pour over potatoes. Top with cheese.

Bake at 350°F for 45 minutes. (This works great if it is covered and refrigerated overnight and baked in the morning.)
