POTATO SOUP WITH RIBBLES 
3 potatoes
4 c. water, salted

RIBBLES:

1 1/2 c. flour
4 egg yolks
1/2 tsp. salt (or to taste)
1 lg. lump of butter

Boil potatoes. While cooking make ribbles by mixing flour and egg yolk together slowly. You may have to add a little water to yolks. Mix until you have little lumps or ribbles.

Add ribbles to boiling water, you may have to add water so your soup doesn't get too thick. Cook slowly until ribbles are done. Add butter and finish cooking. The thickness of your soup depends on the amount of liquid. Adjust to taste. You may replace some of the water with milk in the final stages of cooking.
