FLUFFY POTATO CASSEROLE 
2 c. mashed potatoes
1 (8 oz.) pkg. cream cheese, softened
1 sm. onion, finely chopped
2 eggs, well beaten
1 tbsp. all-purpose flour
1/4 tsp. salt
1/8 tsp. pepper
1 (3 oz.) can French-fried onion rings, crushed

Combine first 7 ingredients; beat 2 to 3 minutes at medium speed of electric mixer. Pour into a greased 1 1/2 quart casserole. Spread crushed onions evenly over top. Bake uncovered at 300 degrees for 30 to 35 minutes. Yield: 4 servings.
