WESTERN OMELET 
7 to 9 slices white bread
12 eggs
1 1/4 c. milk
Pepper, to taste
1 lb. bacon, chopped
1 green pepper, diced
1 onion, diced
8 oz. grated Cheddar or Colby cheese

Grease 9 x 13 inch pan. Remove crusts from bread. Arrange on bottom of pan - trim to fit. Mix well the eggs, milk, pepper. Brown bacon until limp; drain most of fat, then finish browning with onion and green pepper.

Sprinkle over the bread. Sprinkle cheese on top of that. Pour eggs over all. Refrigerate overnight. Bake at 250 degrees for 1 hour.
