3 QUICHE AT A TIME 
3/4 lb. grated Swiss cheese
3 tbsp. flour
3 med. onions (sliced in circles and cook in bacon fat or butter)
6 eggs
3 c. milk
1 c. cream
3 dashes nutmeg
3 frozen pie shells

Choose one for each quiche: Frozen spinach, cooked and drained. 1/2 pound lean bacon, cooked, and frozen chopped broccoli (cooked and drained).

Prick pie shells with a fork. Bake at 450 degrees for 5 to 8 minutes. Mix cheese and flour together. Spread cheese in pie crust, sprinkle with spinach, bacon or broccoli. Add onion rings. In bowl, beat eggs slightly. Add milk, cream, milk and nutmeg. Pour into pie pans. Jiggle pan to settle liquid.

Bake at 450 degrees for 15 minutes. Reduce heat to 350 degrees. Bake 30 to 40 minutes until custard sets. Cool 10 minutes before cutting.
