Even hard core chocolate addicts will love these brownies. The banana is essential for a moist texture; its flavor is subtle.


1/2 c. cocoa
1 tbsp. instant coffee
2 very ripe bananas
1 c. brown sugar
4 eggs
1 tsp. vanilla
1 c. oat bran
1/2 c. flour
1/4 tsp. salt
1 c. chopped nuts, raisins or sunflower seeds


1/3 c. cocoa
1 c. powdered sugar
1 tsp. vanilla
3 tbsp. milk or coffee

Combine cocoa, coffee, 1 tablespoon water and bananas in a large bowl and mix until smooth. Add sugars, eggs, vanilla and mix well. Add oat bran, flour, salt and stir to blend, then add nuts. Spray a 9"x13" baking pan with non stick spray and spread brownies mixture in the pan. Bake at 350 degrees for 30 to 35 minutes. Cool in pan.

To make the icing, sift cocoa and sugar together, mixing well. Add vanilla and 1 tablespoon milk or coffee. Stir to blend. Add enough extra liquid to make the icing spreading consistency, stirring well. Spread over cooled brownies. Cut into squares. Makes about 24 brownies.
