CAROLYN'S POSITIVELY PERFECT POTATO
SALAD
 
2 lbs. potatoes, about 6 med.
1 sm. onion, finely chopped, about 1/4 c.
2 tbsp. sugar
2 tbsp. vinegar
1 tsp. salt
1/8 tsp. pepper
1/2 c. Miracle Whip (or mayonnaise)
1 stalk celery, chopped (opt.)
2 hard cooked eggs, chopped (opt.)

Heat 1" water. Add peeled, sliced potatoes. Heat to boiling. Reduce heat, cover and cook until potatoes are tender but not mushy; drain. In large bowl (while potatoes are still hot) stir in onion, vinegar and sugar, salt and pepper. Cover and chill at least 2 hours. Toss with Miracle Whip (mayo) until potatoes are well coated. Stir in celery and eggs.
