DOLLAR SIZE POTATO PANCAKES 
6 med. potatoes, grated
3 tbsp. flour
1 tsp. salt
1/2 tsp. baking powder
2 eggs, slightly beaten

Peel and grate potatoes. Pour off as much liquid as possible. Mix flour, salt, and baking powder and beat into eggs. Stir through shredded potatoes. Drop by spoonfuls onto well-greased heavy skillet. Brown on both sides. Makes 30 pancakes. Serve with bacon and lots of applesauce.
