RAW POTATO DUMPLINGS 
6 raw potatoes, peeled & grated
2 eggs
Salt
Flour
Butter

Peel and grate potatoes and let drain until most of the water is drained off. Add the eggs and salt; beat well. Add enough flour to make a stiff dough. Knead and shape into dumplings.

Drop into boiling salted water and cook gently. When dumplings come to the top, remove them. Brush with butter and brown in the oven, or cut in half and brush with melted butter or cover with gravy.
