|BAKED CHICKEN SALAD|
2 chicken, approximately 4-6 c., cooked and cut up (can substitute turkey)
2/3 c. diced celery
2/3 c. mayonnaise
1 can cream of mushroom soup
2 tbsp. lemon juice
1 tsp. salt; optional
2 pimentos, chopped, or to taste
4 hard boiled eggs, chopped
1 c. grated cheddar cheese
2/3 c. slivered almonds
Bread crumbs or potato chips to cover top
Mix all ingredients, except bread crumbs. Sprinkle bread crumbs or potato chips on top.
Bake 20-25 minutes at 350 degrees. Freezes well. Good served cold, also. Serves 8.
