APPLE CAKE WITH CREAM CHEESE FROSTING 
2 eggs
2 c. sugar
1/2 c. vegetable oil
1 tsp. vanilla
2 c. flour
1/2 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. nutmeg
4 c. diced peeled apples
1 c. chopped walnuts

Beat eggs until light and fluffy. Gradually add sugar, oil, and vanilla. Sift together next 5 ingredients and add to first mixture. Stir in apples and walnuts. Put into greased 13 x 9 x 2 pan and bake in preheated 350 degree oven about 45 minutes. Let cool 10 minutes and frost with cream cheese frosting.

NOTE: Cake dough is VERY stiff, but cake is moist.

CREAM CHEESE FROSTING:

1 (3 oz.) pkg. cream cheese, room temperature
3 tbsp. soft butter
1/2 tsp. vanilla
1 1/2 c. confectioners sugar

Mix all ingredients together until smooth; frost cake.
