1 (3-4 lb.) whole canned ham
1/2 c. California Cream Sherry
1/2 c. Tropical Sherry Glaze (see below)
Place ham in shallow, uncovered baking pan. Score ham with sharp knife. Pour Sherry over ham. Bake in moderately-slow oven (325 degrees) for 1 hour. Baste every 15 minutes with additional Sherry.
Spread Tropical Sherry Blaze over top of ham; continue baking for 20 minutes longer.
TROPICAL SHERRY GLAZE:
In a saucepan, combine 1 (9 ounce) can crushed pineapple (undrained), 1/2 cup orange marmalade, 1 cup California Cream Sherry, 2 tablespoons cornstarch, 1/8 teaspoon mace and 1/4 teaspoon turmeric. Heat, stirring constantly, until sauce thickens and clears. Use 1/2 cup to glaze ham; serve remaining sauce, hot or cold, as an accompaniment to the ham.
