CHINESE BARBECUE SAUCE (CHAR SUI) 
1/2 cup dry sherry
1/2 cup hoisin sauce
1/2 cup soy sauce
1/2 cup sugar
6 cloves garlic
1 tbsp. black bean paste
1 tsp. five spice powder
1 tablespoon chopped shallot
1 tsp. salt

Mix ingredients in the top of a double boiler and simmer 10 to 15 minutes. Allow sauce to cool before using.
