EGGNOG MUFFINS 
2 c. flour
1 tbsp. baking powder
3/4 c. prepared eggnog
5 tbsp. butter, melted
2/3 c. sugar
1/2 c. dark rum
1 egg, beaten
1/2 tsp. freshly grated nutmeg

Preheat oven 400 degrees F. Grease a 12 cup muffin tin.

Sift together the dry ingredients. Stir in wet ingredients and mix well. Spoon into prepared tin. Bake until tester inserted in the center comes out clean, about 20 minutes. (Makes 1 dozen.)
